Excellent next to barbecue, a great summer dip, that can be great with pita bread, with some mint tea is awesome! here is how:
Place the yogurt (one pint) in a sieve lined with a couple of paper towels (or use coffee pot filters), sprinkle with little salt. Let the yogurt drain for several hours or overnight. If the room is warm, place in the fridge to drain, cover it with plastic wrap. When it looks firm and rather dry, flip over onto a bowl and drizzle some olive oil on top, your dip is ready to enjoy!
